we've been indulging (oh so often) in a simple summertime treat--homemade strawberry shortcake. jeremy found the recipe for the cakes on the back of a bisquick box and made a few tweaks. they are super yummy, a cross between cake and a biscuit, and without all the artificial ick & preservatives in store-bought shortcake. such an easy recipe, too. it's a great way to put all of our locally-grown strawberries to good use.
here's the ingredients & instructions:
2 1/3 cups bisquick baking powder
1/2 cup + 1 tablespoon milk
1/2 cup + 1 tablespoon applesauce (we use trader joe's chunky cinnamon apples)
combine all ingredients and plop batter onto a cookie sheet. (recipe makes 6 large or 8 small cakes). bake at 425 degrees until bottoms are golden brown, about 12 minutes.
in the meantime, wash & slice a basket of strawberries. (peaches are really good with this, too).
to make fresh whipped cream, pour 1 cup heavy cream into a bowl. add 1/8 cup sugar. using a hand mixer, beat until cream becomes thick & fluffy, with soft peaks.
slice the cakes in half & layer with fruit & cream. enjoy!
